Bought New Horizon and now the fun begins. Want to remove the holding tanks. How would this be accomplished?

Curiosity question: I found another New Horizon online with the same block in the same location below the stove. I originally thought it was peculiar to my RV but not so. Does anyone know what's going on?

Have 1984 New Horizon...want to remove furnace. How should it be done?
