Just bought a 1986 Toyota Dolphin. Bathroom located at the rear floor plan. It has all original appliances including the AC/heater unit, fridge, propane water heater, sinks, and stove. I'll list a few concerns:

1.Does anyone have any manuals you can share?

2.Knowledge of the plumbing or electric systems?

3.My AC on the roof is dripping water and the roof dips in that area. Any tips to address it?

4.Needs to be weather proofed all around and I'm sure parts of the roof will need to be replaced. Tips where I should start?

4. I want to switch to an electric water heater and a solar system for off the grid use and more reliability.

5.The door is jammed. Doesn't want to open. I noticed the handle is loose.

6. I don't know how to disassemble  the table without unbolting it. There is no latch.

Any suggestions, recommendations, tips, or how to's, tutorials that helped you will be extremely helpful and appreciated. TIA!

You're going to have to remove your roof AC unit so you can replace the gasket on the underside. Make that a priority. Gasket is not expensive but the units are heavy and cumbersome. Once off you can inspect the integrity of the support joists where the hole in your roof for the AC is.  The AC gasket will resolve the AC leak issue.
