I use a device called a "Cake Breaker" to hold and guide the thickness of the Spam slices. It looks like a large comb with metal tines, and an extended handle so you can hold the entire can of Spam then simple cut with a sharp knife. Works much like an onion / tomato slicing guide but has larger spacing between the tines. However, if you enjoy thin slices use the onion slicing guide. Or use a roast holder slicing guide which clamps onto the outside of the meat.
